The group surveyed consumer evaluations of the taste of vegetarian protein products and found that the taste is not good enough compared to meat. This, they say, is because even the best veggieburgers contain fibers with a minimum diameter in the micrometer range. Real meat is textured down to nanometer dimensions. To get consumers to buy artificial meat, the group says, the fibers will have to be miniaturized as well.
The study was conducted by PROFETAS,PROtein Foods, Environment, Technology and Society, a multidisciplinary Dutch research program studying the options for more sustainable food production and consumption.
Actually, they may be onto something. If nanotechnology can improve the taste of veggieburgers, maybe we'll eat less meat, which would improve the health of our planet and ourselves (not to mention the animals).
